Actually, Vash and Knives are both plants, and the angel arm, as you have dubbed it, is merely what happens when they reveal the true form of only one arm.

after all it no longer fires .45 rounds

I still count it as the same gun.
At no time does he carry 3 guns.
And since part of the gun is the first gun i count it as the same gun, just a different form of it.
