Enchilada soup. Okay so here we go.
1 large diced onion ( I used half yellow half red)
Half red and green bell pepper diced.
About a teaspoon of minced garlic (fresh works too)
Shallots would be great too.
Sautaued for about 5 mins in butter.
Added about 12 ish ounces of a homemade enchilada sauce although a can of store bought would work too
Then 8ozs of cream cheese
Let that melt in while breaking it up
Then add
1 can of corn
1 can black beans
1 can diced tomatoes (fresh works too again)
Spices to taste (paprika, cumin, chili powder, cayenne, etc) this is optional as enchilada sauce often uses these spices. I did add a bit of the first three though
Then I added about 2-3 cups of vegetable broth( bullion mixed in water) one can also use chicken if you're planning to add shredded chicken into it!
I did add some extra cheese for added creaminess/cheesy goodness.
Let that all cook for a bit.
Top with fresh avocado, jalapenos, cheese, tortilla strips, sour cream, vinegar based hot sauce, cilantro or anything else you see fit!
We didnt have any cilantro unfortunately but that woulda been the icing on the cake. No sense going out to the store during times like this just for that though!
