Game design is deciding that the wildlide should exist and what it should do
Programming is making it happen
programming is making the animals behave the way you feel is natural, so in a sort you would be designing the way the wildlife is.
game design is a much broader term than the few people that are listed under "game design"
What you're describing here is not necessarily what they do, since they might just have been told to program the animals for specific tasks.
That said, even if that was the case this would still not really be game design as much as general programming as you are not designing anything too significant to the game.
The thing is that the guy up there probably doesn't care. He just wanted to work for Nintendo, even if it meant as a code-monkey.
it obviously isnt a big part of the game, but you can say that its your part part of the game, that you decided that they are going to react to x with y, in the exact way you decided, its mostly typing in codes and numbers but its still design.
and off coure he dosent care that he is a codee monkey, he works for fucking nintendo, not alot of people can say that

He didn't end up going to a game design school, but rather got an education in programming. He then entered as a programmer for a smaller division of Nintendo and is listed as a programmer for botw.
Not very likely that he ever did any designing given such a past.

Very few people who try to become game designers generally do, most end up in branches of the business such as programmer and he just probably has a strong background in programming for games.
There's a video of him there. He clearly isn't the smartest person around, but he seems extremely happy with his position.
It sounds like there is something you have misunderstood about game design.
There's a reason why the guys who made the 3D Engines that these games are running on are not marked as game designers.
