Not much easier at all actually, Plutonium is, for the most part a man made element found as a byproduct of a nuclear reaction with uranium, and is much more radioactive than Uranium in term of potential energy received.

Okay, so we bury it as you suggest, now we have large tanks (which are designed for containment of 1000 years (half life of plutonium is 80 million) mind you and aren't exactly cheap to manufacture) containing highly radioactive material in high concentration shoved in the dirt/sand. Well the problem is when water runs underground (rainfall, aquafers etc), it goes all over the place. So then, if an earthquake happens, then tank must stand up to the wear and tear that nature throws at it for the next 1000 years (at which point the tank will be replaced by 'future generations') without fail. Nature isn't kind when it comes to time... Not to mention they will need vast sections of land with high security to watch over these tanks as this is highly radioactive material (terrorism and what not).

This all costs money, and lots of it at the taxpayers expense, not to mention large safety concerns. I simply can't see nuclear power being sustainable long term

This is exactly right. Literally takes thousands of years for a core to become non-reactive after they fire it up the first time in the reaction process.

However, a positive for nuclear energy is the amount of 'fuel' required is exponentially smaller than the coal counter part, as well as 'cleaner' in terms of immediate carbon footprint. What people don't realize is that this spent nuclear fuel will have to sit for multiple thousands of years before their radioactive levels are safe. So they create large vats to keep it dormant, and these vats need a place to be kept safe with high levels of security. If one were to fail, there will be a lot of radioactive waste outputted into the environment, hence why they need a place where there is little water as water absorbs radiation like a sponge. And once the water has it, it spreads to the water sources (in the US). Yucca Mountain in the Nevada Desert was thought to be such a good place, until the found water in its caves..
