Carbs should be in form of potatoes, sweet potatoes, brown and integral rice. Avoid bread, flour...Oatmeal is good too.
Its simple diet. For example, 100 gr of brown rice has 23 gr of carbs. On a 100 carb day, you have around 500 gr of rice to eat. Thats shitload of rice when cooked...But on 50 gr day, you only get 200 gr. Eat salads, leafy greens (lettuce, spinach, broccoli, cauliflower, cabbage). Moderation is they key.
And keep working out, as much as diet is important, so is right exercise.

Do carb rotation. Eat different ammount of carbs each day. One day 100gr, other day 50, then 75, then 50, then 100. Along with protein (lean chicken breast, or beef) in moderation (about 2,2-2,5gr per kg of body weight). Also, good fats, like olive oil ( a teaspoon with each meal), leafy greens, salads (no dressing, be carefull with salt). After two weeks, start introducing 0 carb days, but dont do 100 then 0. Try to keep with exercise and results will show very fast. Also, drink water, no need aplenty of it. If you are thirsty, drink it, if not then dont.
As for 'good' carbs (there are no good carbs, but atleast try to keep it in simple carbs range) eat brown or integral rice, sweet potatoes, regular potatoes.
Fruit try to avoid, since it has sugars.
Boil food, bake it (on baking paper), grill it, steam it. Dont fry or deep fry it.
Since i cant work out (issues related to cancer) i do diet. Went down from 100 to 89 kgs in about a month or so with this type of diet, and regular light exercise (squats, sit ups, push ups).
