I never had such issue with windows 10, it never forced me to update without giving me an option or ever interrupted me.

Yeah I haven't had issues with it either. I rarely have to restart to update in the first place.
The video there is pretty old.

Mine updates at night. When all my processes are still going. I have things to finish in the morning that I can't close, but no. I lose it all. The very existence of my studies, simulations, and entertainment is in vain. All I know. Gone.

Just browse update settings?

Here mate, my settings.
It only asks me to schedule once a month or something.
I set it to 6AM when i don't use the pc and set the data to be like 4 days from now on, just in case. That way, when i go to sleep the updates will only install if i turn off my pc.

If it is set to 'automatic" for you then it's no one elses but your own fault.
For optimal, just set it to like 3Am or 6AM whenver you're obviously not using your pc, and that is it.
