To be fair the point being made is in response to the mentality that taking pride in the accomplishments of your forefathers is idiotic, whereas at the same time we should still feel bad ourselves for what happened in previous generations. This juxtaposition is hypocritical as well. There is no implication made that we should not reflect on the sins and misdeeds of our forefathers.

mainly i think it has to do with how strict the screening is for the meat and what antibiotics and chemicals can be giving too.

I always heard it was the other way, like how they serve ginger with sushi to help kill bacteria in the fish but in america it doesn't matter we still serve it anyway which is good because I hate ginger.

Pickled ginger is actually used a pallet cleaners when enjoying sushi.

After enjoying one variety of fish, you would eat some to cleans your pallet in order to enjoy the next variety with no hint of lingering taste from the previous variety of sushi.
