Do me a favor. It seems like you enjoy working out which is why you perceive it as simple . The next time you would, don't. Instead, stare at the wall for an hour, slapping yourself every 5 minutes hard . That's what it feels like when you just start working out. You're taking time away from activities you enjoy to do something that you not only perceive as boring, but actively painful.

Now imagine the thought that when you finish, you have another 2 days where you "have" to do this.

Then call it a simple life change.

I think you're confusing "simple" with "easy". Those life changes really are simple, but it's hard for people that don't have a lot of willpower.

Something needs to be perceived as easy in order for people to perceive it as simple. When you perceive it as hard, you start pointing at all of the complications which make it hard, which then increases the level at which you find it to be a complicated process.

You have to imagine, as well, that ease and simplicity are perceptual, not objective.

It's taken me around a year.

It really isn't a drastic life change... it's just planning what to eat rather than leaving it until the last moment and munching out on takeaway and processed stuff.

Also, you only have to go to the gym for an hour or so, so the way I see it you'd probably spend a lot more time than that sitting around procrastinating or watching TV so you may as well put some of that time to use.
