Okay, so:
1. Illusion scene: Subaru was supposed to be stuck in there for quite a while and basically get a mental breakdown, not get out in 10 seconds flat
2. Ram scene: Ram was supposed to actually fight Wilhelm and Ricardo
3. They didn't even bother introducing the merchants in the anime
4. Subaru's village speech was completely different in the novel
5. Kind of minor, but they didn't mention that Felix had literally died and come back to life
6. Beetlejuice 3 wasn't supposed to die in the explosion in the cart, it was supposed to be the same one that allahu akbar'd Wilhelm
7. Beetlejuice 3 was supposed to send up about 300 arms into the sky and rain them down on the village, killing dozens of knights, civilians and witch cult members (the more arms he uses, the less control he has over each)
8. Wilhelm was supposed to figure out Beetlejuice's resurrection secret right before getting allahu akbar'd
9. The 2nd female Beetlejuice was supposed to chase Subaru through the town, get tricked by Subaru charging straight at her, getting tackled from behind by Patrash, smashing her into a building and breaking her arms and legs.
10. After this she was supposed to use her invisible arms sort of as grappling hooks to chase Subaru through the forest for several minutes, not 10 seconds.
11. Subaru was supposed to throw Beetlejuice's book over the boundary field, and as she was picking it up, a dog was supposed to bite her in the neck before she had time to react as Subaru was talking to her about the boundary field, distracting her.
12. Emilia's fight against Beetlejuice. In the novel, she creates ice on the ground so she can skate on it and deliver physical attacks. When she freezes Beetlejuice, he breaks the ice cage and kills her, starting to gloat about his victory, before it's revealed the Emilia he killed was a decoy made out of ice and Emilia kills him from behind.
13. Julius's personality was completely messed up in the last scene with Subaru (also Wilhelm was supposed to be there as well, as he was the one that figured out Subaru was possessed, not Felix)


There's a couple other minor adaptation issues, but those are the biggest ones.

2 more episodes. My issue is, if they were planning on going to the end of arc 3 since the start, they could've at least made an effort early on of saving an episode by doing volume 3 (episodes 8-11) in 3 episodes instead of 4. Because they basically covered 1.2 volumes in the latest 2 episodes..

Getting every little thing down for a manga to anime would be nearly impossible. mostly because of how different story telling is on manga medium to a show medium. There are a lot of shows that do it well. Some examples are mostly for Madhouse that I can think of like One Punch Man, Hajime No Ippo and especially Hunter X Hunter.

Although I have to be honest, as a novel reader, I fucking despised yesterday's episode. They fucked up every single scene in the episode. And no, it's not a hyperbole, I mean literally every single scene.

Dude started working on his relationship with Julius, the fingers were eradicated, and Beetlejuice Romanee-Conti got to go for a joy ride in everyone's favorite Subaru before the damn thing crashed. Even if it resets, a lot of valuable shit was learned this time around. If you didn't think much happened in this episode, why are you even watching the anime? By your standards, "nothing much" has happened since episode 1.

And there in lies the problem. Creating scenarios that don't matter for plot points that aren't particularly interesting.

You have to have a pretty good scenario to justify a time reset.

Ok so I really have a lot of difficulty understanding the "struggle" here. Based on my experiences, I've noticed that very often, people's likes and dislikes about things are simultaneously very subjective and can change readily. I learned to sing from a very early age, learned to play guitar when I was in high school, and basically thought I'd grow up to be a musician. At one point when life got busy, I moved on from that phase and really, it wasn't very difficult to do. Right now I work in a molecular biology lab and I love what I do, but couldn't I be almost equally happy if I were, say, a mathematician or an economist? I don't see why not. Most of the time, people's likes and dislikes of a topic are correlated with the exposure they had to it. Even boring subjects have interesting niches, and once you discover that, you learn to love the subject. Unless you have like a lifelong laser-focused ambition like Batman (or Darwin, or Aristotle- and I respect you immensely if you are in this category), I think most people can be happy in whatever subject they choose to study. So growing up, when it came to choosing careers, for me the choice always fell to actual, tangible considerations like what field would be most tangible for me to take, or what field would translate to most benefits for humanity, or where the most cutting edge of interesting scientific innovations are, and so forth. My subjective likes and dislikes very rarely played a role.

You need two things to have a happy life I've found.
You need practical skills so you don't end up in unemployment hell and feel like you wasted a decade and a half studying to become something completely fucking useless, and you need an interest in something else, preferably something honing a skill of some sort, as that will make you much more interesting and it'll give you some way to blow off steam.
The former you make your job and your income, and the latter you make your passion.
You might be really ino acting, but let's face it, odds are you aren't that good and the industry would break you. Do it in your spare time, find an improv group, take up amateur theater or something.
Are you really into feminism and gender inequality? Pick up a book in your spare time when you get home from your engineering degree and then actually think about why most women don't enter STEM then, don't spend 3-8 years getting a bachelor or doctorate in gender studies unless you literally never want a job.
Passion is good, and passion is needed, but I've found that nothing corrupts an interest and a passion more than making it your work. I like physics, I really do, but fuck man I really wish I didn't have to study it to get smarter and better at it, I wake up every day with the sentence "I don't want to do this" echoing in my brain. I also like playing the guitar, and merely the fact that nobody is telling me that I have to do it is enough for me to do it.

tl;dr
Work is dull anyway and ruins your interests, do your passion in your spare time so you don't lose it by it being force fed to you.

I like music, im a musician, now joinign a band and hoping on god that we make it is a stupid pipe dream, sure itd be great but then so would winning the lottery.
so I made a practical chocie to study up to become a music teacher, and i work with bands and projects in my spare time, so i have a solid base on which to live, whilst also being able to further my ambitions as a musician. im financially secure, by no means living a life of luxury, but im happy and i dont wake up dreading work.

Never seen it. I know its about a group girls becoming pop idols. If you like the "Cute girls doing cute things" style of anime, I'd expect you'd enjoy it
