That's standard store brand and it isn't dry nor firm, you can see it bending in a few of the images.

That's dry and firm. Mozzarella is normally sold in balls in very lightly salted water. I'm tempted to say that mozzarella has been processed to be low-moisture.

It's definitely low-moisture. which doesn't necessarily mean it's worse, low-moisture mozzarella is better for melting, so it's used on pizzas and the like. Fresh mozzarella has too much water in it, and so you'll get puddles of water in whatever you make with it, which in some cases means you have to drain your product after baking/cooking. Sources: I used to manage a pizzeria and now work as a chef.

the only order that's actually important in the loop is that the reservoir feeds into the pump -- everything else doesn't effect performance.
