I wouldn't really call it watered down. It has a lot of new mechanics and it's really good as it's own title. Faster paced combat is a nice change after hundreds of hours of DS1 and 2. Even though it has less weapons, every single of them is mechanically different from the others (while some of them are a bit similar, though). So not really watered down, different is the right word.

Well depends a lot on your weapon of choice. I did a run with the holy blade ( I forgot the name of the guy whose it is originally ) and another one with blades of mercy. While the holy blade was just button mashing, blades of mercy run required a lot more than any of my Dark souls 2 runs at least ( and I did that shit with power stanced Caestus which didn't feel very easy later on). If you're talking about Dark Souls 1, maybe, I did only one playthrough so I don't know.
But tl;dr: stunlocking everything with a big weapon is really easy in Bloodborne, I agree with that.
