I know the math does work out but in your example. The host would have the option of opening either goat door if you initially choose the car door. Then there are 2 ways to win and lose in each scenario..

Does not change the odds. If you pick A and the host removes a goat, you still switch to a goat. So you lose either way.

If you pick A and the host removes a goat, you still stick with the car, so you win either way.
The host removing B or C does not chance the outcome, therefore does not changes the odds
