That's why it's advisable to only cook the amount you are going to serve, and toss it immediately after straining with whatever sauce you will serve. If you are going to do a cream or cheese based sauce, the straining shouldn't be a big deal, as the fats and oils will coat the noodles nicely. A pomodoro sauce or a scampi (oil based) shouldn't need to be rinsed either, since the oil base will coat the noodles when you toss the pasta with it. If you are serving a tomato based sauce though (marinara, bolognese, etc.) I highly recommend the starch water and butter, immediately followed with tossing your pasta in. It's amazing.

I'm not one of these guys who says "Durr, 5 years of culinary school." I've never been to culinary school. I did, however, work in restaurants and kitchens most of my life. About 20 years of experience...and a lot of those mother fuckers can cook. We all traded secrets, and tricks. A buddy of mine who is still in the restaurant business comes over at least once a month and all we do is try out new recipes. Needless to say, my fiancee lives for those nights. Last week we did fresh whole rainbow trout stuffed with citrus, red and yellow bell peppers, vidalia onions, garlic and fresh tarragon and dill. We then tied them off and grilled them. Shit was cash...
