I've done almost exactly this with mineral oil. It was a 13 yo Compaq. As long as you keep the PSU out of the oil you are golden. Also, take off the fans they will just die. Depending on the GPU you may want to keep it out of the oil so that the original fan can cool it unless you have some way to move and cool the oil.
