The problem is, just having a ton of vegetables will not help you lose weight in the long run.
Your body needs a balanced diet. This means veggies, carbs and some form of protein (Ideally you get your protein from a mix of meat and fish).
Cooking stuff for yourself really helps a ton and even though in some countries fast food is way too cheap, as long as you buy enough for say 3-4 meals and put the other servings in the freezer you should be good. Obviously not all dishes stay edible when frozen but you can plan accordingly once you get into it.
tl;dr - changing the way you chose and prepare your food in a balanced way is a better long term solution for losing weight than just switching to veggies only

Simply cutting out processed food will help increase your wellbeing significantly. Eating raw organic vegetables will skyrocket it further. I do agree that you will need balance though. If all you can afford is a big batch of vegetables (which hopefully you eat and store properly to avoid spoiling), you can supply yourself with the correct nutrients through supplements. I do agree with you as well that it's best to get these nutrients straight from the source (even though getting protien from animals is not the best way to get protein imo.)
Honestly, the best food (in nutrition and cost) you can get is the food you make yourself. Buying cheap GMOs is just as bad as buying the processed foods. They contain pesitcides, preservatives, altered genetics and have significantly less nutrients than organically produced food, and organic food does cost a lot. Growing it yourself with your own fertilized soil under organic means will save you the most money and get you the greatest health.

I love local organic food because it gives you not only a great amount of nutrients but also amazing taste. Sure, homegrown is even better but many people (me included) don't have the space to do it.
Also, making something delicious out of a limited set of ingredients is an invaluable skill to learn because you'll simply end up with much less waste which is also great for the budget.
