Basically the published adventures give you a premade setting and quest for you to use with your players, most of them for 5e are designed to take you from level 1-10, and after that you will probably have enough experience to give running your own campaign a shot.

They contain info about the area the adventure takes place in, as well as what monsters, loot, and npc's you'll find there. It also tells you how those things will react to the players depending on how they behave.

tldr; it does most of the prep work for you, allowing you to focus on just running the game and making sure the players don't ruin the game too much with their bullshit.

Be warned though, while they take off the pressure of creating a setting by yourself, you need to read them over at least 2-3 times so you won't be surprised by anything if you players decide to go in a direction you didn't expect and end up in an area they weren't meant to be in yet. It also saves you breaking the flow of the game to scan through the book looking for the 'right' answer to their questions, it's often easier to make up the answer on the fly than see if there's one in the book, and just use the book for the overarching adventure
