Mercury can form deposits in the brain this is due to changes in fluid solubility. Essentially, some things will dissolve in fluids better than others. For example, butter won't dissolve in water, but it will easily dissolve in oil. pH (acidity) will also play a large role in how soluble something is. And, as you could probably guess, the other stuff that's already dissolved will have an interaction as well.
Some combination of these factors causes mercury to be less soluble in the brain. The mercury falls out of solution and gets trapped in the brain.
As far as "holes in the brain" and alzheimer's is concerned, it makes me think you are referring to amyloid plaques. Essentially, there's a protein in your brain (and everywhere else, but mostly your brain) that gets cut into pieces as part of a normal process. Sometimes (mutations, etc), these cuts happen at a different location and you end up with this insoluble piece of junk (amyloid) that floats around in the brain. These pieces of junk will stick together like oil droplets do because they're insoluble.
Now normally your immune system will just remove this junk before it ever causes a problem. However some gene mutations or environmental factors will cause this to happen faster than the immune system can keep up.
So now you end up with a slowly growing mass of garbage. The presence amyloid mass will create reactive oxygen species (free radicals) which kill nearby neurons. The dying neurons add to the mass and create more free radicals, which kill more neurons. The problem cascades.
While this is happening, your immune system will still attempt to clean up, but ends up doing more harm than good. It will trigger an inflammation response around the plaque. Long term inflammation damages the surrounding neurons and ends up contribution to plaque formation.
I do not know if mercury causes/contributes to amyloid plaques, or if it causes a similar issue, or if it's something else entirely.
