I once fired a arrow at a giant, missed, and still gained an archery level.
After killing the giant, I later found a butterfly on the ground next to an arrow.

I've got a similar story. I was once playing battlefield 3, as an Engineer. I was armed with an RPG-7v2 when an enemy attack chopper swings out of nowhere and starts causing trouble. I fire at it with the (unguided) RPG, and missed. I turn my attention away from the chopper for a moment to try and find something more suitable for taking it down, when suddenly I see in the killfeed "MASDERCHEEF [RPG-7V2] xXxSomeAsshole'sGamertagxXx". To this day I have no idea what happened, but I believe I hit a sniper or a jet with the stray RPG.

I once tried to shoot a bandit and missed, then saw my archery level rise. After a while I had managed to kill the bandit and immediately after I finished looting him a giant I accidentally shot launched me into space

Too bad you can't kill butterflies without catching them in Skyrym.

Except you're wrong, you can attack all insects with any kind of attack.
Melee, magic, bow and shouts all work on them and will kill them.

And seeing as you probably have never played the game before, I'll tell you about another mind **** in Skyrim. You can actually do the same kind of attack the dragons do, it's called a shout and you can learn to breathe fire! How cool is that.
