But, the Pauli Exclusion Principle states that no 2 electrons can have the same quantum number. So that means you've just changed all the electrons around you, and eventually you changed the electrons from different galaxies.

Philosophy major here to make you doubt your free will.
Doing what you want to do is not the same as libertarian free will. You do what you most want to do invariably. But who or what determines what you desire? This is a particularly troubling question because you cannot be the thing that determines your strongest desires. For you must desire to change your desires if you could change your desires, which means that desire had to already be set inside you without your action being involved at all.
What, then, decides your desires?
If materialism is true and all there is to reality is the physical, then you're desires are decided by chemical reactions which were decided by your genes which were determined by evolution. Your desires are controlled and thus your actions are controlled.
"But I'm still committing these actions!" you say. Consider this: when you come to an opportunity for a decision to be made, you must act. You have no choice but to act. Not acting or making a choice is a choice in itself. In any set of circumstances you are propelled, outside of your free will, into making a decision. This decision, as already discussed, is determined by your strongest desire which is determined by your body.

If there is only material reality, you are no free. You are physically determined to do every action you have ever done just as a foot is destined to bounce by reflex after the knee is struck.
