Gold is more dense than water, and waterbenders pull water out of the ground or out of plants often in the Avatar universe.
Gold's softness and malleability would be invaluable here to guide it through the cracks in the rock.

Also: If you were a goldbender, you could form gold jewelry from solid blocks. This could more than halve the cost of your jewelry (once you take out the cost of the furnace and fuel for the furnace). Assuming your jewelry is of a similar quality as other, traditional goldsmiths, the market would seem to favor your jewelry.

but it does follow physics. earthbenders pick denser boulders, which they then throw, firebenders can't function without dryish air, air bender can't bend under water, waterbenders can't make water. Gold would not come out of the ground, and if you remember, benders can't move most objects, like how tohf couldn't simply rip the box open, she had to use physical force whilst weakening the metal.

Airbenders routinely bend air underwater, firebenders have been shown firebending in the rian (that's more than 100% humidity by definition). Sure, gold wouldn't suddenly appear in the ground, but you could still locate and then pull out any veins. As to your comment about Toph, that was the very invention of metalbending, so of course it was rudimentary. Seen later, Lin Beifong was able to manipulate a metal whip and several metal walls/doors, even going so far as to use metalbending to pull her armor out of the closet and put it on.
