bloodline doesn't determine whether a person is a bender or not, just what element they are able to bend.

So wait, I've been away from the Avatar fandom and show a while ago.
So what determines bending abilities again? (I assumed it was a recessive/dominant gene thing.)

well all of the air nomads where benders because of their high spirituality. so........religion determines it? even i'm still iffy on this subject.

And I think i remember hearing that a person needs to have an unbend-able spirit to be a bender, but i can't find anything proving this.

As for abilities after learning they're a bender, thats all up to training. The only thing that is limited to certain people is lightning generation. Zuko is unable to. however, things like bloodbending and metalbending can be done by any waterbender and earthbender respectively

no, if the unbendable theory is true, then when aang or korra "energybends" the ability to bend into someone or takes it away, they're either making their spirit unbendable or bending their unbendable spirit

Hmm, well for the bloodbending one, if I remember correctly, while bloodbending is one of the most powerful advanced arts (if not THEE most powerful), it also takes a great degree of will-power, concentration, and pure raw power to be able to use properly. Even losing your focus in the slightest allows someone to break their hold (at least from what I've seen). So if the Bloodbenders mind was distracted, or undisciplined, it would be fairly easy for even a non-bender to be able to break out of the hold. Likewise, wouldn't it make sense that the harder the blood-cells themselves are to get ahold of, the more difficult it would be to bend? (such as, if the blood was abnormally thin, or if there was adrenaline pumping through it?)

I actually know very little about the show, so someone correct me if I'm wrong; but it does seem like a valid point

Bending is just manipulating the element telepathically, but it usually requires a sort of physical movement in order to do so. I think amon just let his guard down and he wasn't keeping their blood steady enough, so they were able to move anyways.
