Here's how Evangelion looks like through the eyes of a guy who's never seen it. Everything I know of it is derived from **** I've seen online.

So, it's an anime about the life of a guy called Shinji (who I assume is the main character). He has some SERIOUS daddy issues, his best friends are a bunch of runners up for the Tsundere lookalike contest, I'm fairly certain one of them's a cyborg or something, there's a guy with a cape and the guy whines all the time and has an identity crysis, despite his dad giving him cool ****. Also something about giant robots.

Penguindrum I can understand, it was the same guy as Utena so it was always going to be full on symbolism.
But Darker than Black? It was just fighting and superpowers - there was absolutely no symbolism unless you really go looking for it.

And people get Eva confused with symbolism. Symbolism represents something it is physically not. If I was holding a glass of water, it could represent my thirst.
The thing about Eva was that it was physically what was being stated - the glass of water is a drink, not a representation of my thirst.

Season 2 was ****, but not because of symbolism, it just abandoned everything that made the first season good - the action, the general atmosphere, the episodic nature, Hei.
I'm still failing to see how there's any symbolism in it whatsoever.

It is kind of like that. But why I really loved it is because I thought the characters were really well crafted, and there were plenty of feels moments (whether good or bad). Also, Anno did a really good job of making really psychologically ****** up characters. I can definitely see why the plot is hit or miss; I personally thought it was ok, but I know a lot of people think it's ********.

The rebuild of Evangelion series seems to be sorting that out in my opinion. The characters are a little different but they're less broody because of it. Shinji's still a whinger but to be honest you can better understand why in the rebuild series given that every chance he has to do something right it ends up failing and then prople criticise him for it.

After seeing the end of 3 I'm hoping 4 is going to be a far more character-based movie, at least for the first half, because of how it ends.

They're both well worth the watch because they're both radically different. That's the short answer, long answer incoming:   
   
The original series was written when the Mangaka was suffering from severe depression and it is painfully clear from the themes and feel of the series. It's a very bleak story with few moments of levity at the beginning that would be seen to slowly decrease over the course of the series.   
   
The characters were all detestable in some respect but the writing is good enough to show why they are like that (most of the time.)   
   
The Rebuild saga on the other hand is a reimagining without the bugetary or situational constraints the original series suffered from. The story shares some similarities in the first movie but from there it begins to follow a similar, though radically different, path through the story.   
   
The Rebuild saga is meant to be the Mangaka's idealised and revised version of the series that eventually fell apart near the end due to a lot of problems (Hence the name Rebuild) and it is clearly the superior work with more empathetic characters and better visuals and story. Even the lowly Shinji's mental issues are far clearer and the reasons for his bizarre decisions more empathetic.   
   
   
However! The original series is a landmark in anime. It is one of the best-known anime series with fantastic visuals both for it's time and now. Even though it has a "Monster of the Day" format watching the characters bounce off each other is good fun at times and if you watch the series and the movie (End of Evangelion) that followed it with a critical eye you can get a lot of good analysis of the mistakes made.

Because it was confusing, highly psychological, and of course old. Due to this every elitist "true anime fan" began praising it like it was the greatest thing since sliced bread. It's a good show in my opinion, and does deconstruction very well, but it's not the most amazing thing ever as so many people try to pass it off as being.

Because at the time it was made, Evangelion was unlike anything else. It was a deconstruction of the entire Super Robot genre, along with a lot of the tropes that made such shows what they were. It showed everyone just how ****** up someone as tsundere as an anime heroine would have to be IRL. It showed us the psychological damage that takes place when child soldiers are forced to fight. The world is broken, humanity is broken, and the people in charge want it to stay that way. In fact, they want it to get worse. And the only people who are fighting to defend what's left of the human race are being manipulated into dooming their friends and family to a fate possibly worse than death.

Shinji is depressed and submissive and, at times, contemptible. But considering what he's been through, a lot of real people would have been a lot worse. I think the disgust many people feel for Shinji is truly disgust at the recognition that in some ways, they are like Shinji. His depression, his lack of will, is exactly what can happen when you experience trauma like he did. Expecting him to act like a normal kid, as this comic's creator seems to, is foolish.
