Okay, so according to the statistics I found (including that chart above), about 16% of people in the world are "Nonreligious," which is 1,120,000,000 people. There are about 13,500,000 Jews, but let's round it up, just to make a point.

Let's assume that half of the "nonreligious" people are not atheists or agnostic, but fall under nonreligious for other reasons. That leaves 560,000,000 people. Let's split them in two (atheist, agnostic), which means 280,000,000 each.

Now, the coin in the tub is too large to be a penny/dime, so it looks to be a quarter. Again, let's assume that the atheists and agnostics each donated $1.75, and the Jews donated $0.25. That means that each of the two 280,000,000 groups donated 6 times as much as the Jews, or 12 times total. If you adjust for the population difference, you'd only need 196,000,000 Jews to donate the same amount as the 560,000,000 of the two groups.

So, if you take all of these assumptions into account, in the instance of this homeless guy, Jewish people were actually 2.9 times as generous.

Yes, but only one atheist person and one agnostic person did that. Look at how many of both groups threw in coins. The majority of donations were coins, so it's completely logical that there would be a coin if you showed only one donation. I'm sure that eventually, a Jewish person would have come along and threw in a dollar, just as it probably took at least a few donations before somebody gave a dollar in the other tubs.
