Different game companies, i.e. different thoughts on the matter.

The former would add a symbolic meaning to the game that perhaps wasn't intended - Rayman: The Great Escape (from Death). The latter is an isolated instance of death which hasn't much baring on the meaning of the game as a whole.

White is the color of death in Japan. Purple represents wealth.

From wikipedia but you can find it on plenty o other websites
"Throughout Asia, in China, Japan, Korea and other countries, white is the color of mourning and funerals."
"In Japan, white robes are worn by pilgrims for rituals of purification, and bathing in sacred rivers. In the mountains, pilgrims wear costumes of undyed jute to symbolize purity."
"In the traditional Japanese religion of Shinto, an area of white gravel or stones marks a sacred place, called a niwa. These places were dedicated to the kami, spirits which had descended from the heavens or had come across the sea. Later, temples of Zen Buddhism in Japan often featured a Zen garden, where white sand or gravel was carefully raked to resemble rivers or streams, designed as objects of meditation."

"In Japan, purple is the color of privilege and wealth, the color associated with the Japanese aristocracy. The word for purple is murasaki, which is also the name of the Purple Gromwell flower"
