I TA an intro level astronomy lab section at a university. One of the labs involves finding constellations and then having TAs mark off the constellations you've found.

If any of you bastards are in my section and find the constellation Triangulum over some easy **** like Orion, I will end you. It's small and made up of 3 fairly hard to see stars that form a triangle, just like any other 3 ******* stars.

my last astronomy lab involved looking at emission spectra and classifying the stars from which they originated.

one of my favorites was when we launched a simulated radio pulse at Mercury, and used it to calculate the rotational velocity of the planet

It's just to get them to look at the night sky and orientate them selves using star charts. I think they do spectra later on in the semester.

The coolest thing I've done so far was take images of a star cluster using a remotely controlled telescope in New Mexico.
We then calculated magnitudes of the stars in the cluster and made a CMD diagram. If I remember correctly there ended up being ~2000 stars (that we can reliably detect) in our cluster.

It was a ton of work (we wrote our own code, and a ~6 page research paper), but we got some damn good data and really nice color images.

That was in the advanced lab course though. The lower division lab is mostly there to satisfy general ed requirements for non astronomy majors.

IDL. It's pretty much the staple when it comes to programming for astronomy.
It does all the tedious calculations for you. Tricky part is writing the code to make it do that for you.
IDL is really great with array manipulation, which makes it useful when you're comparing lists of attributes on thousands of stars haha. It's not too tricky to learn, and is fairly flexible when it comes to syntax.
I had only had one semester of intro level Java going into that lab course (which was practically useless) and learned enough to do our first paper in ~2 weeks.

You'll probably use some sort of computer language in the intermediate labs. Probably python. That's looks pretty similar for what my degree requires as well.

I would assume that you'll have to take at least one of the labs. At my university we can either do just the astronomy lab or advanced lab + electronics or computational physics.

Also, pro-tip. If you want to get into REUs/gradschool talk to professors now about doing research with them.
