As much as I hate to say this, half of these couldn't logically exist in the Pokémon universe. This is because Eeevee evolves in order to adapt to it's surroundings. There is no reason it would need to fly in any situation, because there would be a different evolution like a Dark or Rock type that it could become in order to survive in that situation apart from maybe on a floating city. So unless such a city is created in the games, a flying eevee would not exist.

In a different vein, dragon/bug/dragon Eeveelutions could not happen in any instance. Because Dragon, Fighting and Bug types are a species and not based upon any naturally occurring habitat, there is no reason why an Eevee would have to adapt to survive by becoming one, instead of becoming(again) either a Dark or Psychic type naturally to either avoid danger or fight back against it.
Ghost types could technically exist, but they'd have to be evolved from dead Eevees. That would be pretty ****** up.
The rest would be cool additions and could be explained by an Eevee having to develop a resistance to poison/living underground/living in a factory/living in a rocky area.

Umbreon and Espeon will always be the best Eeveelution.

All the other ones are fake, they're lies, deceit. You're forcing Eevee into becoming something that it's not, force-feeding it and training it. But if you show your Eevee kindess, if you make it not only a Pokemon, but a friend, it will develop new power through the bonds you share.
