The primate body is designed to process meats and vegetables. We have incisors and canines to rip through flesh, and premolars to chew it up. We have an entire organ dedicated to the consumption of hardy proteins, and the amino acids we cannot produce come from.... Meat.
Vegans (vegetarians are a separate matter) are only possible due to a truly decadent society; You could not live the way you do without modern aids. That is exactly the reason we are omnivorous; Necessity to survive.

Oh yeah spinach is great with iron too, for example, you would have to eat more than 1700 calories of sirloin steak to get the same amount of iron as found in 100 calories of spinach.

Well the thing is, Sardines contain 0% carbs. You know, that stuff that keeps us running. That means thats 50% fat and 50% protein. And thats not that healthy fat, thats animal fat.
Meanwhile, spinach, is 56% carbs. There for not only giving us protein, iron and other stuff. Oh yeah and only 14% fat. Polyunsaturated fats.
You get more bang from your buck when you eat spinach.

Vegetable (culinary): any edible part of a plant with a savory flavor.
Vegetable (legal): commodities that are taxed as vegetables in a particular jurisdiction

Here is a list of fruit in the botanical sense, but used as vegetables for you: tomatoes, cucumbers, squash, zucchinis, pumpkins, peppers, eggplant, tomatillos, chayote, okra, breadfruit, avocado, green beans, and snow peas.

Though any part of a plant that is edible can be considered a vegetable.
