the knives I use don't cut cleanly through it, it applies the force in such a way so that it just calapses in to a mess, even when I wrapped it tightly

1. Sharpen it or get a better knife.
2. More cutting motion, less downward force.
3. Hold as close as possible to the cutting line.
OR
Get a cleaver and cleave it in twine.

You need more substance in the actuall roll, eg: more rice+packed even tighter=no crumble
