microorganisms in the air land onto the towels and after you shower, the towels contain miscellaneous skin tissue and other stuff collected on it. There, after the towel has gotten wet/damp, it allows microorganisms to land and "swim" and interact with the other organisms. they feed and breed and produce waste. that waste creates that musty smell.

that only really happens if you don't hang it up every time you use it.

or if you're in a damp environment with poor circulation, but that's also why it doesn't smell as bad when you hang it up to dry after the first time, but after a while it does because the cycle repeats.
