The date for christmas was sorted when catholics came north and met the pagans and such and realised they both celebrated yule and christmas around the same time, so they agreed on a date for one celebration. Christ wasnt born ( if he was born that is) on the 25th but it was around that general time of year.

Christians celebrated during a time when Christianity was still frowned upon by everyone and killing Christians was still accepted. Even when it became legal. (Around 300 B.C.-400 B.C) Christmas was also viewed as more festive than Easter which was much more about morning at the time.
Just like now the end of the year was riddled with a crap load of holidays and it was easy to blend in during all the other celebrations. Even when the calender changed almost every religion decided to keep their celebrations at the end of the year. Aslo not many presents.

People started celebrating in the 4th century. And the term Christmas is from around the 10th. I'm not sure what you mean by barely celebrated though. There were more Christians in the 16th. century, which would mean the celebration would be more widespread.
