Yes, single is generally used as an adjective, but it CAN be used as noun aswell. Haven't you ever heard someone use it in that conext?

Cmon guys, the image even makes it clear at the beginning of the definition with "A man..." You guys know that's a noun right?
If the image meant it as an adjective, the definition would have been something like "The state of a man who..."
This next bit is going to garauntee me downvotes, but I'm going to say it anyway: Lately, I've been finding it harder and harder to like and enjoy Funnyjunk because majority of the community is so fucking stupid it isn't even funny. Most of the humour here has been reduced to dumb jokes that aren't clever or funny in any way. And yet there's always a bucketload of comments going "lololol it's funny because he farted" or other shit like that.
And now this shit; you guys don't even understand what you're mocking...
To perhaps the one or two people who will read this and agree, thank you. You're the last thing making sure that Funnyjunk still maintains what little intelligence it has left. You're awesome.

Use the adjective form, and you get "That man is single", which is the way that everyone uses. I guess your way wouldn't be WRONG, but it's definitely not used as often. It's like homosexual "gay" vs happy "gay", sort of. In a grammatical context instead of as a definition.
