It's the Opponent Process Theory: your fovea (in retina) contains cones with percieve 2 colors each (red-green, blue-yellow, black-white), and when exposed to one of those colors, the cones' sensitivity to that color decreases. Thereafter, if the color shown is taken away, the opposite (opponent) color for that specific cone shows up.
