Yeah, there's a basic set of rules and fair play. But it's all acting anyway, so it doesn't really matter, whether they break them or not is just part of the act to rile the crowd up. In this scene, they want the other guy to avoid getting creamed. Don't worry, though, he'll probably get kicked in the face in the next match.

i think both of his shoulders need to stay on the floor while the other fighter is on top, if not the count is cancelled and restarted when they are both again on the floor. in this gif he has both shoulders arched upwards, so only one of them is against the floor at any given position

both of the shoulder blades must be on the ground for a pin to count. the area touching must reach from about the spinal depression to you shoulder. that is the regulations in high school wrestling so i am assuming they have the same rules for a pin to count
