because it's the only scale that isn't placed arbitrarily. The divisions of degrees are arbitrary, but it's the only whose starting point makes sense scientifically.

Celsius' starting point (I presume you mean "0") is the freezing temperature of water. While you're right and Kelvin applies to a wider spectrum of materials, I don't think that means it makes more scientific sense than Celsius.
