To put it into more detail, they are a plush representation of the sprite but into the field of play in a pokemon battle after a pokemon uses the move "substitute". To use the move, the pokemon sacrifices 1/4 of it's health and puts that into the substitute. When the substitute is in play, all damage is directed to the sub instead of the pokemon, and the sub will fade once all of the health it was given is gone. Up-sides to the sub is that if a pokemon deals more damage than the sub has health, the extra damage does not wash over to the pokemon. Also, you cannot put status effects onto subs, so they are a good shield to that. It's important to note, however, that sounds moves penetrate the substitute and harm the pokemon behind it.
