Poring liquid nitrogen into a tub of lukewarm water. It causes the liquid nitrogen to evaporate into a gas, and therefor expand, at such a high rate that it pretty much "explodes" like you see above.

That is why i put quotation marks around "explodes". In order for it to be an actual explosion it would also have had to release heat and light. It does however, provide the necessary spontaneous gas expansion to be labeled a low-energy explosion if there had happened to be a source of heat presented from the reaction.
