I think it's because it's taken in different section. Like instead of capturing the entire planet, they take certain parts, then piece them together like a puzzle, so there's no point to have stars in the background. I may be wrong.

I learned a little about photography and even at this scale i think it still applies. I'm pretty sure It has to do with the exposure. If it were exposed so that the stars were visible then the light that's reflected off the planet would make the planet barely visible. It would be mostly white. (:
