As an astronomy major, I'd like to point out that Mercury is in fact a more greyish color. While this picture captures the texture, its coloring is altered to show more detail.

Newer rock that was formed from volcanic eruptions ( 'new' as in only hundreds of thousands of years ago compared to the other rock being there for millions of years) and the newer rock is more reflective than the older rock
