In one of the episodes of Torchwood (or Jack Harkness Is A Sexy Beast Show), Jack is literally blown up into a chunky blood mess. They don't find much of him but he starts to regenerate anyway. It took a long ******* time but he came right back.

Doctor Who- YANA(You Are Not Alone)(greek subttles) It would be fun that Face of Boe = Jack theory were true but, either Jack is a big trickster like River or he's deaf. Here between 2:10 and 3:40 The Face of Boe is mentionned, Jack doesn't seems to react but at the end of The Sounds of Drums he tells that he was called the Face of Boe whe he was young.

After she said that, he a quick thinking look on his face, and being jack, he knows about timey-wimey stuff, so he might have thought that we he dies, he'll tell the Doctor some kind of cryptic message, and he knew what the message was because of what happened right after this stuff, and during all that time thought of a message that he would understand when the time came.

Writer Russell T Davies, in the episode's commentary, called the implication of this scene "a theory" as to the Face of Boe's origins, prompting Executive Producer Julie Gardner to urge him to "stop back-pedaling" about the two characters being the same. Davies also said that after writing the scene he inserted a line in the ADR recording for "Gridlock" in which the Face of Boe calls the Doctor "old friend".[1] However, Davies does not like making the relationship between Jack and Boe explicit, stating "the moment it became very true or very false, the joke dies". He has refused the publication of spin-off novels and comic books that have tried to definitively link the two.[2]

Jack cannot die because Rose infused him with energies from Time Vortex. Energies keep reseting him to that moment in time. But they are not doing it perfectly, tiny changes happen over time, like after few hundred years he started having gray hairs. Face of Boa is millions of years old and lost a body, changes kept accumulating.
He died because after millions of years, energy Rose gave him ran out.

I think it was just assumed that he was immortal after they witnessed him receiving fatal and severe injuries and recovering within seconds and not aging over the course of many years. He wasn't immortal but simply had a lifespan of five billion years which could be perceived as practical immortality to any being with a lifespan of barely a century
