It's still cold at the poles so whether it's land or water is irrelevant. It'd still be covered in snow and ice.

Only problem is that not all of it is permanent ice, look at the North Pole, because of the warmer seawater in the summer the amount of ice decreases, so it would be different each season, on Antartica land is land, if the ice on the poles would melt, Antartica would still be land, the North Pole would just be another sea/ocean.
