think about what qualifies as "earth" in the avatar world.

coal, crystals, sand, a meteorite from space. all these things can be earthbended. therefore, in this world, it's considered "earth". even ores.

they learned it from badger moles. i think the first human earth benders were the two lovers from book 2 chapter 2, oma and shu.

In the world of Avatar, all bending came from animals
Water bending came from La and Tui (the Yin and Yang fish in the North Pole)
Fire bending came from dragons
Air from Flying bison
and Earth from badger-moles. Oma and Shu eloped and discovered the moles and learned how to bend the earth like them, creating the city of Omashu. Toph later on leanred how to bend like them as well. As for how the adverge garden variety bender of today learns it, i'm guissing a relative or a teacher.

im sorry but you are wrong about the water bending part they first learned it from the moon. (The moon is the source of power in waterbending, and the original waterbenders learned to bend by observing how the moon pushed and pulled the tides)

yes and no i guess wile yes the fish held the spirit of the moon it was the moons physical form (the giant rock in space not fish) that guided the first water benders. the fish is held highly for its spiritual side since the water benders worship the moon as a source of power so to do they protect its spirit and watch over it
