There is no "true orbit", you always need a frame of reference.
So, if you see the sun as a fix object, we rotate around the sun. If you see the center of our galaxy as a fix ojbject, we still rotate around the sun, but the sun rotates around that object (some black hole).
The thing is there is no one and only frame of referance, no absolute movement, as the galaxy could move too, as well as the whole universe.

Yes, the frame of reference is completely subjective because the universe doesn't distinguish which objects are stopped and which ones are moving, simply the difference between their velocities, so we choose a point of reference which we deem fix to make it easier to study and comprehend.
I could say that the Earth was completely immobile and the Sun was spinning around it, while every other planet in the Solar System spun around the Sun. It would still be correct because in this case I was using Earth as the point of reference.
We are only taught the model where the Sun is a fix object, which is also correct, because it is simpler and more practical while my example is obviously over complicated.

Basically take the tradition model of the solar system with the planets going around the sun in their orbits, now tilt this 60 degrees and imagine the entire model, as is, circling the Galaxy. He also mentions that the solar system does go up and down about 200 lightyears with gravity always pulling it back to the center of the disc but the Galactic disc itself it 1000 light years thick so it would be pointless to show anyway.

Ah, well I hadn't actually seen the video. The only thing wrong with this model is that the sun is shown in front at all times, which I couldn't really see from this angle. Kudos for the article.
