Because, the sith were not evil but the portrayal of their morals were corrupted by what the common people saw them as. Thus they were made to be evil, when really the jedi were the oppressive force.

He made, and directed the star wars story line, it was Lucas that made the Sith to be evil. It was he who wrote the men and women who turned the view of the public.
