Sharks' paralysis when upside down is called "tonic immobility" and it is a result of the altering of their senses when they are upside down causing their senses to be overwhelmed and shocked by the sudden change that they enter a natural state of paralysis.

The best description of what actually happens to the shark during tonic immobility is based off Catatonia. Which means a person (or animal) is awake, but does not move, talk, or react to anything but pain, and can stay like this for hours. Humans can only achieve such a state through particular drugs and overdosing, when we feel an overwhelming sensation of pain, or pleasure we can pass out. That's much a like what happens to sharks, flipping them over causes their distinctive 2 senses that humans don't have to "malfunction" allegedly because they're calibrated in a way that makes them only function when a shark is comfortable with its surroundings and can focus.

Note that sharks don't rely on vision much when hunting prey (which is all they do really, they're predators mostly). Sharks rely on smell, vibrations, and electrical impulses that emit from their snout to detect nearby movements of the water, and can distinguish it accurately to depict whether it's another shark, or prey.

Now really, we humans rely mostly on vision for like everything we do right? While Sharks mostly rely on smell, vibrations and electrical impulses through the water. These senses are royally ****** up and mixed up when a shark is put upside down, due to the change in gravity acting upon their biological structure and pressure change. This is why flipping them over will shock their system and make the shark paralyzed for upwards of 15 minutes depending on the size or species of shark. If we lost our vision suddenly, I'm pretty sure we'd freak the **** out and panic. That's what happens to the shark except their reaction is for their body and senses to shut down temporarily while they recover.

Going on a tangent here but I've already said a lot so why not, the 2 senses are the ability to sense electrical pulses and perceive both vibrations and pressure changes in water, which is only possible for a shark because light and sound travel at different angles and speeds in water, than they do in the air.

TL;DR - They're paralyzed when flipped upside down because their sixth and seventh senses are designed to function a bit like a GPS, they require steadiness and comfortable environment to focus on said senses. The turning over causes them to become paralyzed because it 'shocks' them for reasons stated above. Unsure if your comment was a joke, but sharks don't rely on vision much at all, so seeing more or a lack of colour is irrelevant.

Not really, I don't understand what they mean by slow-motion. If they truly see in slow-motion, then their vision would be constantly lagging behind. I think what they mean is that they can process visual information faster than we can maybe? It's vague and poorly worded.

Flies process their information faster, so they perceive time slower. Much like a person could during an adrenaline rush when in danger. It's mainly due to their size. The flip side of this is the belief that elephants perceive time faster than humans.

It's actually believed to be true of most animals; their perception of time is directly related to their size in contrast to a human. Bigger animal = faster perception, smaller = slower perception.

I think its more at a higher framerate so say it takes a bat to come to a human's face a total 10 frames (random number roll with it) but a fly sees that bat coming to their face taking 20 frames. So for us, by frame 5 we realise the bat is coming and duck we have 5 frames to dodge, but for a fly to take 5 frames to realise and duck, its got 15 frames to dodge (5 to complete the dodge and 10 to tell you got git gud and fly away)
