Trust me cinnamon and meat does not go well.

It's fine if you don't add any of those ingredients. The egg mixture is supposed to be like an easy sweet custard for bread to soak up.

You could just use egg and a bit of water or milk to thin it out a bit for your french toast.

And with the leftover egg, you could make scrambled eggs. That's what I do whenever I make french toast and made enough slices for brekkie.

Not really - a lot of breakfast foods (at least in America - I can't really talk about other coutnries) are like this. I mean really the only sugar is from the french toast which if made properly shouldn't be that sweet.
