I think its about just how extremely mundane their lives are and how self important they (and perhaps the average American) make themselves feel. Kind of like how Hank literally thinks it's his God given duty to provide folks with propane like it's the next cure for cancer, Peggy takes huge pride in the meaningless substitute teacher award etc. There are some good one-liners here and there too.

Then again, how is being sapient better? As you said only our species can appreciate being sapient as something. This might seem like a confrontation but I can't answer this myself. We are self-aware, but what advantage does that give us for survival? Some might say that being self-aware allows us to overrule all other species on our planet, but then again, how is that good? What would that prove? We wouldn't survive alone, our environment calls for balance. What if being self aware is merely our role, how is it better than the role of the fungi that recycle the dead, or the role of trees, or rocks. Why is it better? Are neurons better than sperm?

This is all sophistry. And poorly executed one at that.
How does being self aware give us an advantage?
Because sapient, self aware (can't separate the two) gives us an ability to change the circumstances we are in, instead of just react. That gives us an absolute advantage to survive.
That word, overrule, I don't think it means what you think it means. What it gives us is the ability to go from being a prey species to role that no other species has. We use other species. Yes. But lets not forget something. There have so far been 5 major extinction events, and 20 minor ones. And if another happens, we, the only thinking species could save not just ourselves, but a large percentage of our biodiversity.
We could also destroy it, yes. but its our role as potential saviors, and not just observers that very much separates us from the other species.
But the most important point is. You are able to sit in your home, and ask this hundreds of years old questions, that have been discussed hundreds of times (I'd recommend reading to start with Aristotle, Plato then go over the Germans, Nietzsche, Kand and Holz. Reyanaud, Camus oh and de Quicy and his art. Just for starters). That's what separates us and makes us better then a vegetable or a mineral. That we can actually sit and think "Am I better then a vegetable or a mineral?" and then take a piece of rock and carve it into a beautiful structure. Or use it to build shelter to save human and animal lives.

All that said and I still don't get it. I've had a glance at the mentioned authors before, not in detail, maybe I should indeed give it a try. I still can't see any reason to consider myself better than my cat. Being able to sit in my home thinking about stuff does not make me feel better at all. I will try to find some papers on studies about all other animals only being able to react and not to choose. I know that we humans tend to anthropomorphize everything, but to say that every living thing but human beings only live by reaction sounds a bit dated and hard to believe. Maybe it is true; I will try to find out.

It sounds like I should feel like I'm superior from the guts, but I feel that we are not. We invented all these laws and rules and we rejoice in our knowledge, and I truly don't feel anything. We keep poisoning ourselves and destroying ourselves. But still, again I am no vegan, meat is tasty. In this moment I don’t have any reason to support the idea that you are better than rock or that I am better than my cat.
