I mean, I heard about it but no one ever told me. I always assumed that birds where women (Due to the British Slang for a girl was "A bird" and the men where the Bee's because they like to sting with their... Pointy parts of their bodies.
No one told me about it.

basically it's used because they have very visible and non-offensive methods for copulation, in the pollinization of various plants and fertilization of the eggs you find in nests. The talk basically makes explaining what sex is, why it is, and how it works both not embarrasing and attention grabbing for young people. Pretty brilliant construct, really, but it has the downside of not having much practical value for learning about STDs and the like.

Birds support the biosphere by helping to eat nasty insects and are a part of the reason the world isn't crawling with insects.

Bees pollinate crops and all sorts of plant life and are incredibly important for the survival of many species.

Birds and bees are very important and completely natural parts of nature.

And so is sex.

Actually I have no idea what I'm talking about, it's an idiomatic expression that comes from some literature and it's thought that a few metaphors are involved. or something like that.
