Well you gotta look at it from Bethesda's view

They spent all the billions of dollars they made from Skyrim on cocaine

The Cocaine bucket is running low

They need money for cocaine

look at WOW though. you have to pay to get it then pay ever month to play it and no one is complaining.... thats just how most big MMOs work

Have you actually played it? It's a freaking awesome game!   
The payment plan isn't that bad though, WoW has been doing it for years.   
Okay, the retail price is a bit steep, but if you look around on the webz, you can get it pretty cheap. I bought it for €19 ~= $25. This includes 30 days of playtime. The first month alone gave me over a 100 hours of play time. I'd say that well worth that money, even if it'd cost you $60.    
After that it's $15/month. which again could be considerably less if you look for 60 day game cards online.    
They are constantly pushing new updates. That and server maintenance is what you're paying for.   
   
The game looks (for an mmo) 			*******		 great. Tbh, in a lot of aspects it looks better than Skyrim (unmodded of course).   
The gameplay is awesome.   
Questing is pretty good.   
Playing with friends is great.   
   
Granted, there are some fundamental Elder Scrolls things that ESO is missing atm. Such as thieving. But they've announced that I'll be implemented.    
   
I think there are much much worse things to spend your money on.
