Then it shows how Jasmine meets her Prince Charming early on but won't realize it till later on in the story. Whether this is true or not is up to debate.

Aladdin is based on an Arabic folk-tale of the same name. It's a part of the story collection "Arabian Nights". She's probably referring to the collection itself rather than Aladdin specifically. Beauty and the Beast came out in 1991 while Aladdin 1992. It was still in development when this came out. Either Disney was teasing their next film without the audience knowing, or the BatB team knew what the other team was working on and decided to use it to describe what Belle had been reading. Either scenario is possible.

Was the prince ever in disguise in Sleeping Beauty? For that matter, the whole point of the story was that she didn't wake up until near the end, so she really couldn't have "discovered" anything.

I always thought it was about Sleeping Beauty, since he actually goes by 'Prince Charming' in the fairy tales and they do meet briefly before she discovers he's royalty. Because he does disguise himself so he can relax from all the royal hullabaloo.
